Artichoke Spinach Dip
Ingredients
1 lb. frozen chopped spinach
¼ cups shallots peeled and small diced
1 ea. garlic smashed and minced
¾ lb. cream cheese
½ lb. can artichoke hearts
½ cups shredded parmesan
½ lb. shredded aged cheddar
½ lb. shredded mozzarella cheese
¼ cup fresh lemon juice
1 tsp. chopped herbs
Blended oïl
Salt t/t
¼ tsp. cayenne Pepper
Method
Squeeze frozen spinach very well. In a saucepan over medium high heat cook shallots and garlic until fragant. Add chopped spinach and cook for 2 minutes, season to taste with salt and fresh ground pepper, add cayenne.
Remove from the heat and cool. Transfer to a large bowl and fold into the artichoke’s hearts chopped, shredded parmesan, cheddar and mozzarella, lemon juice and herbs. Divide into qt containers and refrigerate or if for serving at the moment, heat it up to melt the cheeses and serve with toasted bread.
